The Best Kale Salad Ever

A nutrition-packed, tangy, raw kale salad that you'll actually crave.

Ingredients
  

Tahini Dressing

  • 1/2 cup tahini (sesame seed butter)
  • 1/4 cup water
  • 2 T Bragg's liquid aminos or Soy Sauce
  • 2 T nutritional yeast
  • 2 T apple cider vinegar
  • 1 1/2 T maple syrup or agave nectar
  • 1/4 tsp garlic powder
  • 1/4 tsp ground ginger

Salad

  • 1 bunch fresh kale destemmed and chopped
  • 2 carrots shredded or thinly sliced
  • 1 avocado sliced
  • 1/4 cup sunflower seeds

Instructions
 

  • Combine all dressing ingredients thoroughly by whisking or blending. Check flavors and adjust if needed. Set aside in a jar, as you'll only need a portion.
  • Put kale in a very large bowl. Pour half of the dressing onto the kale and begin to massage with clean hands until it's softer but still has a slight crunch or toughness. Taste to check, you don't want to over massage. You might need to add more dressing if desired. Save the remainder for another time. (it's great on romaine lettuce too!)
  • Add in the remainder of your salad ingredients and serve.

Notes

**If you're making this ahead of time, you can reduce the amount of dressing and pour some on it without massaging. The dressing will break it down for you. You might need to add a little more dressing when ready to eat, though.
