Veganuary Recipe Roundup

Happy New Year, everyone!

The first month of the year is probably one of my favorites simply because there are so many new possibilities and exciting things on the horizon. We’re reflecting and getting inspired to better ourselves, and that’s a beautiful thing! It’s also a time when many people choose to go vegan for the month, also known as Veganuary! I thought now would be a perfect time to put together a quick, short Veganuary recipe roundup to get some inspiration from some incredible chefs and bloggers!

Some of these I have made before, and some of them are on my meal list for this month. If you aren’t already, give me a little follow on Pinterest to see what meals I’m sharing over there as well.

1. Raw Vegan Sushi by Love and Lemons

I think everyone on earth should try this wonderful sushi base from Love and Lemons. Its base is sunflower seeds loaded with other tasty ingredients and can be used in many ways. It is a staple in our house for sure! Super easy to make, just remember to soak your sunflower seeds to prep beforehand! This is raw food at its tastiest.

2. Easy Vegan Ramen by FoodbyMaria

This easy vegan ramen by FoodbyMaria looks amazing! I haven’t followed her recipe yet but the ingredients are on my shopping list for this week! My kids are obsessed with all things Ramen and I know they will love this one. I appreciate how she gives us the option of seitan or tempeh for the protein, too.

3. Cheesy Kale Chips from OmNomAlly

Looking for a healthy snack to keep around for Veganuary? Look no further than this savory crunchy bite of cheesy kale chips from OmNomAlly. These are incredible! The cashew cream and nutritional yeast flakes are the key to this cheesy flavor. If you make these, definitely make a couple of batches bc they go quickly!

4. Sticky Sesame Chickpeas by Eat with Clarity

A lot of folks are trying to not only eat vegan but eat extra healthy right now, and this recipe of Sticky Sesame Chickpeas by Eat with Clarity is a great addition to your gluten-free, vegan repertoire. And on top of that, this recipe takes just 15 minutes to make! Garlic, sesame, and ginger are some of the amazing flavors you’ll enjoy when you sit down to a bowl of this lovely dish.

5. Vegan Taquitos by Elavegan

Looking for some comfort food? I definitely wanted to include some in this veganuary recipe roundup. This recipe for Vegan Taquitos by ElaVegan is on my pinterest board and I can’t wait to try it. The seasonings look to be more of a middle eastern flavor than the Mexican flavors I anticipated, but these got great reviews and look super tasty. I definitely plan on making this for a weekend dinner soon!
