Silken Tofu Green Goddess Dressing

This silken tofu green goddess dressing is heavy on fresh chives and parsley, bright with lemon, and garlicky without being aggressive.

Why silken tofu instead of mayo or sour cream?

Traditional green goddess dressings lean on mayo, sour cream, or sometimes avocado for their creamy base. Those work fine. But silken tofu does something none of them do: it adds a meaningful amount of protein without changing the flavor. A standard serving of this dressing gives you around 4–5 grams of protein, which doesn’t sound like a lot until you realize your dressing has never done that before.

Silken Tofu Green Goddess Dressing

Ingredients
  

  • 1 block silken tofu
  • 1 bunch fresh chives (or 2 green onion tops)
  • 1 handful fresh parsley
  • 1 clove garlic (or 1 tsp granulated)
  • 1 T maple syrup
  • Zest of 1 large lemon
  • Juice of 1 large lemon
  • 2 tbsp olive oil
  • 3/4 tsp salt to taste
  • Fresh ground pepper to taste
  • water to thin if needed

Instructions
 

  • Drain the silken tofu and add it to a blender or food processor.
  • Add chives, parsley, garlic, maple syrup, lemon zest lemon juice, olive oil, salt, and pepper.
  • Blend on high until completely smooth, about 60 seconds.
  • Taste and adjust: more lemon if it needs brightness, more salt if it's flat, water if it's thicker than you want.
  • Transfer to a jar and refrigerate. Keeps for up to 5 days. Shake the jar when you go to use it.

Notes

Silken tofu varies slightly by brand. Some are a little firmer, some looser. If yours blends up thicker than you want, just add water a tablespoon at a time until it pours the way you like.
